Turmeric Tilapia
Ingredients
Marinade:
1 ¼ pounds tilapia filets
1 ½ tsp fish sauce
3 garlic cloves, minced
1 ½ tsp minced onions
1 ½ tsp turmeric powder
2 Tbsp olive oil*
½ tsp salt
½ tsp white sugar
Stir Fry:
1 small onion
8 scallions
2 oz fresh dill
4 Tbsp olive oil
Serving:
3 Tbsp roasted peanuts
8 oz Vermicelli noodles, cooked according to the packaging

Directions
In a large bowl combine the fish filets and marinade sauce. Cover the bowl with plastic wrap and marinate for 30 minutes or up to overnight.
In a non-stick skillet, preheat 3 Tbsp olive oil over medium-high heat. Cook the filets for about 2 minutes on each side or until golden brown and cooked through. Transfer them to a plate. Set them aside.
Wipe the pan clean with paper towels. Heat 1 Tbsp of oil. Cook the sliced onion and half of the green onions just until translucent. Add half of the dill and toss for 30 seconds or until wilted.
Add the fish back to the pan. Add the remaining dill and green onion on top. Continue cooking for a few minutes until the fish is warm enough.
Divide noodles, fish mixture, and peanuts into 4 bowls.
